Growing up, we called them hotcakes. On the weekend, my mom would whip up an amazing, fluffy batch dripping with maple syrup. Today, I look for healthier options, but I still enjoy finding or creating delicious gluten-free pancake recipes.
We share our favorites below. Not surprisingly, several of these came from my sister, who also loves homemade gluten-free pancakes. Others were created by Jeff, and still more are from some of the fabulous recipe websites we follow.
Difference between pancakes and crepes
While both are beloved breakfast dishes, they differ in texture, ingredients, and preparation. We included both below.
- Pancakes are typically thicker and fluffier, often made with a leavening agent like baking powder to give them rise. They’re hearty and hold up well to a stack of toppings.
- Crepes are generally thinner and more delicate. Typically, the batter has more milk, less flour, and usually no leavening agent. This results in a smooth texture that’s perfect for rolling or folding with sweet or savory fillings.
