A healthy alternative to traditional fried chicken, this quick and easy oven fried bbq chicken with a tangy bbq flavor uses only three ingredients. It’s easy to make it gluten-free. This delicious family recipe is shared to KibitzSpot by Sue Undreiner.
This oven-fried bbq recipe is one of my favorite ways to cook and eat chicken. It is so easy to make and tastes great.
My mother would only make this once in a while when we were children, so it was always a treat.

How much of each ingredient do I need
I’m a “creative” cook, so I never measured anything…I just eyeball it. I use enough bbq sauce to cover the chicken and enough cornflake crumbs to generously coat the chicken.
Sometimes I have too much, and other times, I have to add more. I’ve been making this for over 40 years. Quantities all depend on how much chicken a person wants to make at one time.
The only time I really measure any of my creations is when specific seasonings are involved.
Therefore, the quantities given in the recipe below are estimates used for calculating nutritional information. In reality, they will vary every time.
Tips for making oven bbq fried chicken
- Even when I use a non-stick baking sheet, I like to use parchment paper for easy cleanup.
- If you are a “skinless” chicken eater, coating it like the recipe instructs (bbq sauce first, then cornflakes) seals in the juices and makes the chicken tender and moist.
- Make it hot or smokey, tangy or sweet – it’s all up to your choice of BBQ sauce.
- DO NOT substitute the cornflake crumbs with bread crumbs.
Chicken cooking times
Typical cook times at 400ºF (200ºC) for this barbequed fried chicken recipe:
- Wings only: 35-40 minutes
- Legs only: 40-45 minutes
- Thighs only: 40-50 minutes, depending on size
- Breasts: 50-60 minutes
- Whole chicken cut up: 45-55 minutes, depending on the size of the chicken breasts
Serving suggestions
This is great anytime you need a healthier alternative to fried chicken.
To get the summertime feel any time of year, try it served with our homemade cole slaw or potato salad. Or, if you prefer warm side dishes, the chicken goes great with fried cabbage, tahini roasted cauliflower. apple eggplant sauté, pan-fried potatoes or sweet potato fries. If you’d like to add a bit more tang, try a dollop of feijoa apple chutney or fig chutney on the side.

About the Sue Undreiner
I started baking alongside my aunt from the time I could reach the countertops. She was an avid and talented baker. I really learned to cook and experiment with food creations in my mid 20s. I love to take a recipe and customize it or use ideas from it to make things I enjoy. Also, I love to bake and create my own things using elements of other recipes. I’ve even won awards at baking contests.
My other hobbies include crochet, where I also use elements from different patterns to create my own projects; making fused glass items (jewelry, plates, platters, nightlights, and bowls); silk scarf dying; and my newest hobby of pine needle basket making. I live in Sun City, Arizona, with my wonderful husband and our 13-year-old dog, Nala. We enjoy riding our CanAm trike on the backroads of Arizona. Follow Sue on Instagram.
