Tips for choosing your salmon
In general, we prefer tail sections from the Pacific in our gluten and dairy-free salmon recipes. Here are the key differences:
Pacific vs Atlantic – highlighted in culinary resources from the National Oceanic and Atmospheric Administration (NOAA)
- Atlantic salmon:
Known for its high-fat content and mild flavor, Atlantic salmon is primarily farmed. It is versatile, ideal for grilling and baking, and commonly found in both restaurants and grocery stores - Pacific salmon:
In contrast, Pacific salmon is most often wild-caught. It includes varieties like King and Sockeye, boasts a firmer texture and richer flavor, making it a favorite for its perceived freshness and suitability for a range of dishes from smoking to grilling.
Tail vs belly section
- Tail section:
The tail section of salmon offers a firmer texture with fewer bones, making it easier to cook and eat, and is preferred by those who enjoy a leaner cut. - Belly section:
Richer and fattier, the belly section of salmon is known for its indulgent flavor, ideal for those who appreciate a more flavorful and moist bite.
