They are a healthy option packed with the warm, comforting flavors of cinnamon and fresh apples. Fluffy and flavorful, they are the perfect way to start the day.

- King Arthur Gluten Free Baking Mix
- Optional for half the flour if you eat oats*: Gluten-free oat flour, buckwheat flour, xanthan gum, baking powder
- Cane sugar
- Cinnamon

- Egg

*Oat-free apple cinnamon pancakes option
As I have an oat sensitivity, common with people who can’t tolerate gluten, my sister created an oat-free option.
- I simply double the baking mix and leave out the oat flour, buckwheat flour, xanthan gum, and baking powder.
- Replace the oat milk with almond milk (any unsweetened plant-based milk like soy or coconut works also)

This Asian spice may reduce inflammation, fend off free radicals, and fight bacteria, according to WebMD.
Red vs green apples?
Red Apples: Red apples add natural sweetness and a softer texture to your gluten-free apple pancakes. The sweetness pairs well with cinnamon, making the pancakes taste more dessert-like. Choose red apples if you prefer a milder, sweeter flavor.
Green Apples: Green apples, such as Granny Smith, are tart and firm. They introduce a tangy contrast to the sweet batter and cinnamon, adding a refreshing zing. Opt for green apples if you enjoy a tangy flavor and a bit of crunch.
Tips for perfect gluten-free apple pancakes
- Mix the batter well, getting out all the lumps before folding in the apple pieces.
- While smaller pieces of apple blend better, I prefer the larger ones for a bit of crunch.
- Preheat your pan to medium heat before adding a small amount of non-stick spray, margarine, or vegan butter (to keep it dairy-free) when pan-frying the pancakes.
- Turn the pancakes when they start to bubble on the top side or when the top side loses its sheen.
Serving suggestions and topping ideas
Honestly, for me, aside from an occasional topping, these apple cinnamon pancakes are a delightful stand-alone breakfast treat. However, if we are having pancakes for lunch, we often add a side salad, like our grapefruit and avocado salad.
Some of our favorite topping ideas:
- Peanut butter (this one is my favorite)
- Fruit jam
- Butter and maple syrup (remember to use vegan butter if you eat dairy-free)
- A dollop of Greek yogurt and a drizzle of honey
Enjoy your pancakes with a cup of coffee, tea, freshly squeezed orange juice, a dairy-free turmeric latte, or if you are really hungry, pair your pancakes with a refreshing avocado banana smoothie.

How can I make these gluten-free apple pancakes without oat flour?
Increase the King Arthur Gluten-Free Baking Mix to one cup and leave out the oat and buckwheat flour, xanthan gum, and baking powder. You will also need to substitute the oat milk with another plant-based milk, such as almond milk, coconut milk, or soy milk.
Can I use dairy milk?
It depends on your dietary requirements. I am dairy-free, so I can’t, but otherwise, it will be fine.
How can I store leftover pancakes?
Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to a month. Reheat in the microwave or on a skillet before serving.

Gluten-free apple pancakes
Makes a delicious breakfast of gluten-free apple pancakes with cinnamon and optional oat flour.
Ingredients
- 1/2 cup King Arthur Baking Mix
- 1/4 cup oat flour* - gluten-free
- 1/4 cup buckwheat flour
- 1/2 tsp xanthan gum
- 1/2 tsp baking powder
- 1 tbsp cane sugar
- 1 tsp cinnamon
- 1/8 tsp salt
- 1 tbsp vegan butter, melted
- 1 cup unsweetened oat milk*
- 1 tsp maple syrup
- 1 tsp apple cider vinegar
- 1 egg
- 1 apple, diced
Instructions
- In a medium-sized bowl, whisk together the dry ingredients (all 3 flours, xanthan gum, baking powder, sugar, cinnamon, and salt).
- In a small bowl or a 4-cup measuring cup, combine the wet ingredients (vegan butter, oat milk, maple syrup, egg, lemon juice, and zest).
- Slowly add the wet ingredients into the bowl with the dry ingredients and whisk until the lumps are gone.
- Fold in diced apple.
- Pan fry using a small amount of non-stick spray or margarine, cooking the pancakes for 2-3 minutes on each side, flipping once when bubbles form on the surface.
- Serve with vegan butter or maple syrup.
