A month back, a friend gifted me a bag of coconut flour. I wasn’t quite sure how to use it, so I went back to my childhood staple of pancakes. With a bit of experimentation, I came up with these delicious coconut flour crepes.
They come out a bit thicker than classic crepes but are still great with fillings. The coconut flavor is so unique.
If you’re like me, you probably enjoy eating similar things every day but appreciate variety. These coconut milk crepes provide a wonderful variation.
Often, I’ll eat several for breakfast, using a different spread on each – peanut butter, maple syrup, or honey to name a few. I’ll even add a few berries.

Coconut flour is gluten-free and high in fiber and protein. WebMD suggests its low glycemic index makes it ideal for people trying to control blood sugar spikes.
Tips for making coconut crepes
- The coconut flour tends to clump in the bowl/pan, so make sure you pop all of the little clumps when you see them.
- The batter tends to make 4 crepes in total – sometimes I eat them all by myself, and other times, I share them with one other person. It depends on how hungry you are.

Coconut Flour Crepes Recipe
This coconut flour crepes recipe is super simple and quick to make. Gluten and dairy free, they’re great for a sweet yet filling breakfast.
Ingredients
- ¼ cup coconut flour
- 1 cup all purpose gluten free flour
- 1 ¼ cup almond milk (easily substitutable with other milk types)
Instructions
- Using a sieve to minimize the possibility of clumps, add the coconut flour to a bowl
- Add all remaining ingredients to the bowl and mix until well-combined
- Heat a frypan over medium heat. Once hot, grease with a neutral cooking spray
- Add ¼ portions of batter to the frypan and spread as thin as possible - you may need to use a spatula to spread it
- Cook for 3 - 4 minutes until golden at the edges. Flip and cook for another 2 minutes
- Serve with toppings like peanut butter, maple syrup, honey, berries, or powdered sugar
Notes
This recipe should make 4 crepes, and can be 2 servings depending on how hungry you are. The coconut flour tends to clump in the batter, so try to pop any dry clumps with a fork when you see them.
